This particular grilled cheese sandwich happens to be about the easiest version ever – and, at least in my opinion, the most delicious. I like to use a combination of cheddar and Monterey jack cheeses: the former, for its sharp, tasty flavor, and the latter, for its unbelievable creaminess. I take the extra minute to grate the cheese, which I find saves time during the melting step. The Easiest Grilled Cheese

  • Servings: 2 sandwiches

I love to pair this easy Grilled Cheese with a bowl of soup or a simple salad for the quickest weeknight dinner. I combine sharp cheddar and smooth Monterey jack for the perfect toasty, cheesy concoction.

Ingredients

  • 4 slices white or sourdough bread
  • 4 ounces cheddar cheese
  • 4 ounces Monterey jack cheese
  • 2 tablespoons softened butter

Directions

  1. Heat a skillet over medium heat.
  2. Grate cheddar and jack cheese, then combine them.
  3. Place two slices of bread on a cutting board.
  4. Top each with half of the cheese, pressing down firmly on the cheese so it stays in place.
  5. Top with remaining slices of bread.
  6. Spread ½ tablespoon of butter on each of the top slices of bread.
  7. Working careful, flip the sandwiches and place them in the skillet, so that the butter side is down.
  8. Cook, pressing the sandwiches down with a spatula frequently, until the cheese begins to melt and the bottom is golden brown.
  9. Spread the remaining butter on the top slices of bread, then flip the sandwiches.
  10. Continue cooking until the cheese is fully melted and the second slice of bread is browned.
