Celebrating birthdays in college was always so much fun. Whether it was your special day or a friend’s, there was always a dinner out, cake, and an epic party. I remember one year, my birthday happened to fall on a Friday. I skipped my only class of the day, and my friends and I drove into Los Angeles. We spent the afternoon bopping around the city, and even though it was pouring rain, it felt so special to spend the entire day surrounded by my besties. Of course, the fancy steak frites we enjoyed for dinner was pretty special, too.

College birthdays also meant, always, a requisite cake from the little bakery just a couple of blocks off campus. We became very familiar with each of their various creations – from chocolate buttercream to ice cream cakes to pink champagne frosting – as we chose a new, special cake for each successive friend’s birthday. The one that stands out most to me is a sky-high funfetti cake swathed in pastel purple frosting that my friends surprised me with one year.

In these post-college years, however, I’m declaring it time to embrace the homemade birthday cake! Sure, you could pick up a dozen cupcakes from the local bakery, instead – I’m sure no one will be mad. But how special would it be to surprise a friend with a cake you made entirely from scratch? My normal go-to birthday cake is the most delicious and decadent chocolate creation (I’ll have to share it with you soon). But today, I decided to switch things up a bit, and try my hands at a funfetti cake. Fluffy, light cake layers are brimming with plenty of colorful sprinkles; a sweet vanilla buttercream takes this treat to the next level. This funfetti cake is the ultimate celebration cake, and perfect for a loved one’s birthday!

Funfetti Cake

This Funfetti Cake features fluffy cake layers, a rich vanilla buttercream frosting, and plenty of sprinkles - the perfect treat for a birthday celebration!

  • This cake is quite rich and sweet, and really does feed a crowd. I actually halved the recipe and baked it in two six-inch pans (for about twenty minutes) for a more manageable treat.
  • To get four layers, I simply used a serrated knife to slice each of the two cakes in half.

Ingredients

For Cake:

  • 2 ¼ cups flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 12 tablespoons butter, softened
  • 1 ¾ cups sugar
  • 6 egg whites, room temperature
  • 2 teaspoons vanilla
  • 2 teaspoons almond extract
  • 1 cup whole milk, room temperature
  • ½ cup sprinkles

For Frosting:

  • 1 cup butter, softened
  • 1 tablespoon vanilla
  • 1 teaspoon almond extract
  • pinch salt
  • 4 cups powdered sugar
  • 2 tablespoons milk
  • sprinkles, for decorating

Directions

  1. Preheat oven to 350°. Grease and flour two nine-inch cake pans.
  2. Sift flour, baking powder, and salt together into a small bowl.
  3. In a large bowl, beat butter and sugar together until light and fluffy.
  4. Add egg whites and beat until combined.
  5. Beat in vanilla and almond extracts.
  6. Add flour mixture in three additions, alternating with milk, starting and ending with flour. Stir until just combined after each addition.
  7. Add sprinkles and gently fold into batter until just combined.
  8. Divide batter between the prepared pans.
  9. Bake until a tester inserted in the center of the cake comes out clean, about thirty minutes.
  10. Let cakes cool for five minutes, then remove from the pans and let cool completely on a wire rack or cutting board.
  11. Meanwhile, to make frosting, beat the butter in a large mixing bowl until light and fluffy.
  12. Beat in vanilla and almond extracts and salt.
  13. Sift powdered sugar into a small bowl.
  14. To the butter, add two cups powdered sugar, one at a time, beating until smooth after each addition.
  15. Beat in milk.
  16. Add remaining two cups powdered sugar, one at a time, beating until smooth after each addition.
  17. Place one cake layer on a plate or cake stand.
  18. Top with one third of the frosting, and spread to evenly coat the cake.
  19. Gently place the second layer on top.
  20. Top with another third of the frosting, and spread to evenly coat the cake.
  21. Use the final third of the frosting to cover the sides of the cake.
  22. Finally, decorate with sprinkles.
