The real crunch time came when my parents sat down in the dining room to enjoy their appetizer. We closed off the door to the kitchen and got to work: Grant searing thin slices of veal in a hot, winey sauce, and me throwing together this lemon pasta dish.

This dish is perfect on its own (or maybe with a simple salad) for the easiest elegant dinner. It also works lovely, in slightly smaller portions, as a preface to a meaty main course. Creamy Lemon Linguine

This Creamy Lemon Linguine is the most simple and satisfying pasta dish. Tart fresh lemon juice combines beautifully with heavy cream for a rich, vibrant sauce.

Ingredients

  • 1 pound linguine pasta
  • 1 ½ teaspoons sea salt, divided
  • 1 cup heavy cream
  • 2 lemons
  • ½ cup white wine
  • grated parmesan and freshly ground black pepper, for serving

Directions

  1. Bring a large pot of water to a boil.
  2. Add pasta and one teaspoon salt.
  3. Cook according to package directions, then drain.
  4. Meanwhile, heat cream in a large pan over medium heat. Simmer until thickened, about six minutes.
  5. Zest lemons, then half and juice them.
  6. Add lemon zest and juice, white wine, and remaining half teaspoon salt to the cream. Cook, stirring constantly, for another minute.
  7. Add drained pasta and toss to coat. Let cook until pasta has absorbed a bit of the sauce and is nicely coated, about a minute.
  8. Serve topped with grated parmesan and black pepper.
