I’ve got a bunch of things running through my mind at the moment, so I’m just going to go with it. First off, it’s been so beautiful here in San Francisco for the past couple days! After some rain earlier in the week it was so nice to wake up on Wednesday morning to blue skies and a light, springtime breeze! I’ve been loving my walk to work, and I even fit in an evening sunset jog. Let’s hope this nice weather lasts! Second, I feel like this week has flown by super fast. Perhaps because I’m on call for work, and we had a long workshop one afternoon this week. I’m not complaining – I’m so excited for the weekend to arrive!

Do you have any fun plans? I’m looking forward to spending some time outside, possibly trying out a new restaurant or two near my apartment (there are so many that have been on my list to try for ages that I just haven’t made it to yet), and cooking up some yummy food! I spent some time this week brainstorming spring and summer recipes. I know that I’ve been on an overload of strawberry desserts around here lately, but I’ve got maybe one or two more up my sleeve 😉 I’m also so excited for lots of fresh raspberries, blueberries, and corn! Oh, and can I just say that I’m pretty pleased with the photos in this post?! I love all of the bright, contrasting colors! I’ve been trying to incorporate more fresh produce and even some flowers as I style my recipes, and I will definitely keep this up through the warmer summer months, when the farmers markets are absolutely overflowing with fresh goodies.

This couscous salad is such a delicious light and nourishing dinner, and I’m so excited to share it with you today! It’s sort of my take on a tabbouleh. Except I’ve substituted couscous in for the bulgar because I love how easy it is to prepare and how well it pairs with fresh vegetables. But the chopped cucumbers, fresh parsley, and mint is there. I’ve also added a simple orange and olive oil dressing, lots of fresh arugula, some spicy radish, and a handful of sweet, juicy raspberries! If you’re looking for a quick and easy recipe to make this weekend or to prep ahead for next week, I hope you’ll consider this delicious spring salad. Spring Couscous Salad

This Spring Couscous Salad is filled with peppery arugula, fresh raspberries, and crunchy vegetables. It's an incredibly flavorful and nourishing dish!

Ingredients

For Salad:

  • 1 cup couscous
  • ¼ cup raisins
  • 1 tablespoon butter
  • 4 ounces fresh radishes
  • 1 small cucumber
  • 6 ounces fresh arugula
  • 6 ounces raspberries
  • ¼ cup chopped mint leaves
  • ½ cup chopped parsley leaves

For Dressing:

  • 1 tablespoon olive oil
  • juice of ½ orange
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper

Directions

  1. Bring a pot of water to a boil.
  2. Place couscous, raisins, and butter in a ceramic bowl.
  3. Add one cup boiling water. Place a plate on top of the bowl and let sit for five minutes, then fluff couscous with a fork.
  4. Meanwhile, in a large bowl, combine dressing ingredients and whisk to combine.
  5. Wash and dry radishes and cucumbers. Dice into small cubes.
  6. Add diced vegetables, fluffed couscous, arugula, raspberries, chopped mint leaves, and chopped parsley leaves to the bowl with the dressing. Toss to combine.
