I’m crushing so hard on these lemon ginger waffles right now. I started off with a simple batter – replacing half of the white flour with some whole wheat flour for a little more heft – then added plenty of lemon zest and juice, a good dose of ground ginger and cinnamon, plus one of my very favorite things – crystallized ginger! These lemon ginger waffles are everything warm, cozy, spicy, and tart, all in one square little package. Lemon Ginger Waffles

These Lemon Ginger Waffles are the perfect breakfast for a cozy winter weekend at home. A hearty waffle batter is infused with plenty of lemon juice and zest, a healthy dose of ground ginger and cinnamon, and sweet crystallized ginger!

  • These waffles are delicious served with maple syrup and either greek yogurt or lightly whipped cream.

Ingredients

  • 1 cup flour
  • 1 cup whole wheat flour
  • 2 tablespoons ground ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 eggs
  • 1 ½ cups buttermilk
  • ½ cup brown sugar
  • 8 tablespoons butter, melted
  • 2 lemons
  • ½ cup crystallized ginger, finely chopped

Directions

  1. Preheat waffle iron.
  2. In a small bowl, whisk together flour, whole wheat flour, ground ginger, cinnamon, baking soda, baking powder, and salt.
  3. In a large bowl, whisk together eggs, buttermilk, brown sugar, and butter.
  4. Zest and then juice lemons. Add zest and juice to wet ingredients and whisk to combine.
  5. Add dry ingredients to wet ingredients and fold together until just combined.
  6. Gently fold chopped crystallized ginger into batter.
  7. Working in batches, scoop about one cup of the batter into waffle iron. Cook according to manufacturer’s instructions.
