I’m dying to know… do you have any fun travel plans coming up soon? I feel like the first month or two of a new year is a great time to take stock of your travel bucket list (you guys have one of those, right?) and figure out where you want to go and which destinations you can fit into the upcoming year. Last January, I made a resolution to visit Austin in 2016. Yes, I made it one of my resolutions, because I was just that enthusiastic about the prospect. Unfortunately, it didn’t happen 😦 Dare I say, like most resolutions out there?! So this time I’m promising myself, this is the year!
My boyfriend and I are also planning a trip to Asia for next month (!!!!!!), and I could not be more excited! It’s somewhere I’ve never been and don’t know too much about, which makes the planning a bit more difficult and the anticipation that much more exciting (and a little scary!). I’d also love to make it back to Europe soon – perhaps in the fall? My parents are planning trips to both Paris and Spain – I’m too jealous!
But the recipe I have to share today is for all of you craving a little tropical getaway. I’m a big fan of smoothies year round, because I think that they’re a great way to fit some extra fruits and veggies into your diet. And I love to experiment with different fun flavor combinations. This particular concoction takes advantage of some seasonal winter produce, and gets a lovely tropical spin from frozen pineapple and mango, plus rich coconut milk. I love the fruity, frosty, tart, creamy combination! Hopefully this smoothie helps to ease some of our wanderlust, until it’s time to embark upon the next great adventure!
