Let’s talk banana bread! Today, I’m taking a real favorite and dressing it up just a bit. Seriously, what is it about banana bread that makes it so delicious and so classic? When I’m looking to cook up those staple, quintessential baked goods, I often turn to my mom’s old recipes. Whether it’s banana bread, peanut butter cookies, or coffee cake, sometimes the old-school, tried-and-true versions are seriously just the best. Don’t you agree? This particular recipe, in fact, may have even come from my grandma.

So, here’s the deal. It’s pretty simple. We’ve got super ripe bananas, butter, sugar, flour, plus eggs and some buttermilk. Exactly what you’d expect out of a sweet, dense quick bread. To step things up just a bit, I’m caramelizing the bananas today. Yes, you heard that right, caramelized bananas 🙂 I simply sliced them up, threw them in a skillet with a bit of butter and let them really develop the sweet flavor of those natural sugars. This banana bread is a seriously delicious update on the classic – I hope you love it!

Caramelized Banana Bread

This Caramelized Banana Bread is perfectly sweet and moist! I caramelized the bananas for a fun, delicious update on the classic breakfast treat.

  • If you’re short on time, feel free to skip the caramelization step and simply mash the bananas.

Ingredients

  • 9 tablespoons butter, softened, divided
  • 2 large bananas, very ripe
  • 1 cup flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • ¾ cup buttermilk

Directions

  1. Preheat oven to 350°. Grease a loaf pan.
  2. Melt one tablespoon butter in a skillet over medium-high heat.
  3. Slice bananas into one inch-thick rounds. Add to skillet and let cook, flipping occasionally, until very soft and caramelized, about five minutes.
  4. Remove from heat and, using a fork, mash bananas and butter together until smooth.
  5. In a small bowl, whisk together flour, whole wheat flour, baking soda, baking powder, salt, and cinnamon.
  6. In a large bowl, beat remaining eight tablespoons butter with brown sugar until light and fluffy.
  7. Add eggs, one at a time, beating well after each addition. Beat in vanilla and mashed bananas.
  8. Add flour mixture in three additions, alternating with buttermilk, starting and ending with flour, mixing after each addition until just combined. Be careful not to over mix.
  9. Transfer batter to prepared pan.
  10. Bake until golden brown and a tester inserted in the center comes out clean, about one hour.
