But I’m also looking forward to taking a break from normal work, exploring the hell out of Shanghai, and totally relaxing in warm, tropical Thailand.

Ok, let’s jump straight to these delicious chocolate chip cookies, because I’ve spent years perfecting them. Yes, literally, years. One summer, I made it my goal to create the perfect chocolate chip cookie, and I spent hours researching all sorts of different techniques. Across the internet you’ll find cookie recipes with butter, sugar, flour, and chocolate in such a wide variety of ratios, it’s impossible to keep them all straight! Some people argue that large chunks of the best bitter chocolate is a necessity, while others stick with plain old Nestle chips. After many, many rounds of testing and so much cookie sampling, I figured out what works best for me: browning the butter, whipping the white sugar and the eggs until super light, and chilling the dough for twenty four hours before baking. Yes, you’ll have to wait a while for optimal results – I promise, it’s totally worth it.
