- Herbes de Provence is a dried herb mixture usually containing thyme, oregano, rosemary, and other herbs. If you can’t find it, feel free to simply use thyme or oregano (or a mix of the two) instead.
- Serve the chicken thighs with the whole lemon quarters and garlic cloves alongside. To enjoy, squeeze lemon juices over the chicken and press the soft, meaty garlic from its papery skins.
Ingredients
- 4 chicken thighs, skin on
- 2 lemons
- 8 cloves garlic, unpeeled
- 2 tablespoons olive oil
- 1 teaspoon herbes de Provence
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
Directions
- Preheat oven to 400°.
- Evenly space the chicken thighs in a glass baking dish.
- Scrub the lemons under cold water. Dry, then quarter them by slicing in half lengthwise, then in half lengthwise again.
- Nestle the lemon quarters and the whole garlic cloves among the chicken.
- Drizzle the olive oil over the chicken thighs, then sprinkle each generously with herbes de Provence, sea salt, and black pepper.
