My parents live in Sonoma County, the little sister to Napa Valley and one of California’s finest wine regions. We’ve actually been spending weekends and vacations there since I was little, but the appeal of this area certainly grew once I was old enough to enjoy a little wine tasting myself. I’m certainly no wine expert, but I do enjoy trying different varieties, and feel like I’m definitely starting to learn my way around the complicated world of wine. Making your own crackers is by no means a requirement, but I encourage you to give it a try – mostly because these cheddar herb crackers are so simple to make and crazy delicious. Each flaky disk is rich and buttery, packed with lots of sharp cheddar cheese and aromatic, fresh herbs. Try pairing these crackers with some sliced prosciutto, fresh fruit, and your favorite red wine for a sophisticated and irresistible spread.

Cheddar Herb Crackers

  • Servings: 16 crackers

These Cheddar Herb Crackers are perfect to pair with red wine. Rich and flaky, they're loaded with plenty of sharp cheddar cheese and fragrant fresh herbs.

  • Adapted from The Food Network.
  • For the herbs, I used a combination of basil and thyme. But feel free to experiment with rosemary, sage, or parsley, too.
  • The dough can be made ahead of time. Simply prepare through step 5, then store in the freezer for up to two months.

Ingredients

  • 8 tablespoons butter, softened
  • 4 ounces cheddar cheese
  • 1 cup flour
  • 2 tablespoons minced herbs
  • ½ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper

Directions

  1. In a large bowl, beat butter until light and fluffy.
  2. Grate the cheddar cheese.
  3. Add cheese, flour, herbs, salt, and pepper to the butter. Beat until thoroughly combined.
  4. Dump the dough onto a piece of plastic wrap and shape into a one inch thick log. Wrap tightly with the plastic wrap.
  5. Freeze dough until firm, at least thirty minutes.
  6. To bake crackers, preheat oven to 350°.
  7. Cut the log into ¼ inch thick slices and place on a baking sheet.
  8. Bake until golden brown, about twenty minutes.
