Spiced Apple Pie Bars

These Spiced Apple Pie Bars are the epitome of fall! Sweet and tart apples are swathed in brown sugar, cinnamon, and a hearty oatmeal crust.

Ingredients

For Filling:

  • 1 tablespoon butter
  • 4 apples
  • ¼ cup brown sugar
  • 2 tablespoons flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg

For Crust:

  • 1 ½ cups flour
  • ½ cup brown sugar
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 8 tablespoons cold butter
  • 1 cup rolled oats

Directions

  1. Preheat oven to 375°. Grease a nine inch square baking pan.
  2. To prepare filling, melt butter in a pan over medium heat.
  3. Wash apples, then core and slice into small chunks.
  4. Add apples and brown sugar to butter and cook until sugar is melted and apples are softened, about five minutes.
  5. Remove from heat, and stir in flour, vanilla, cinnamon, and nutmeg.
  6. To prepare crust, stir together flour, brown sugar, salt, and cinnamon in a large bowl.
  7. Slice butter into small chunks.
  8. Add butter to flour mixture and, using your fingers, rub butter into flour until small, pea-sized chunks form.
  9. Stir in oats.
  10. Remove one cup of the crust and set aside for the topping.
  11. Pour the remaining crust into prepared pan and press down to form an even layer.
  12. Top crust with apples.
  13. Sprinkle reserved crust over apples.
  14. Bake until golden brown, about thirty five minutes.
