My new apartment is exactly 2.5 blocks away from Trader Joe’s. And exactly 4.5 blocks from Whole Foods. How awesome is that? I used to pick up the majority of my groceries at the very same Trader Joe’s on my walk home from work, but then I still had to trek a couple miles across the city (with all my bags) to get everything home. The woes of big-city grocery shopping. Nope, no more of that.

Living so close to two of my favorite grocery stores is super convenient. Maybe a little too convenient sometimes (I might have frequented TJ’s three times last week alone…). Literally, it’s my favorite place to stop for a couple things, or to pick up all of my pantry staples in one mega haul. Rolled oats, peanut butter, frozen blueberries, and a big bunch of bananas are always in my basket! You can’t get better than the low prices and high quality at Trader Joe’s, in my opinion. For this recipe, however, I decided to branch out and grab everything at Whole Foods. Particularly when I choose to cook meat, I figure that I should go with the good stuff. And when there are only four ingredients (and a couple seasonings) in a dish, they better be amazing!

This one-pan, simple dinner is an homage to one of my very favorite things: anything and everything roasted! Seriously, I’m kind of addicted. Hand me anything edible, and there’s a good chance that I’ll try to roast it. For this meal, I combined autumn delicata squash with sweet grapes and red onion, then layered a few sausages on top for the most simple and delicious dinner. An entire meal, from one roasting pan. What could be easier? With a while in the oven, each component takes on the most lovely, deep, rich flavor. The juices of the red grapes start to caramelize and the pungent onions mellow out just a bit. With just a little olive oil and sea salt for extra flavor, these simple ingredients transform into the most amazing savory fall meal.

Roasted Sausages with Squash & Red Grapes

These Roasted Sausages with Squash & Red Grapes are the perfect simple and easy-to-throw-together one pan meal. Hearty squash, sweet grapes, and the subtle tang of caramelized red onions perfectly complement the savory sausages.

  • I find it unnecessary to peel the squash, since the skin softens nicely while roasting. This saves a ton of work, too!
  • Try serving the sausages with some Dijon mustard.

Ingredients

  • 1 delicata squash
  • 1 red onion
  • 1 bunch red grapes
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 4 Italian sausages

Directions

  1. Preheat oven to 425°.
  2. Rinse squash under cold water. Dry, then slice in half.
  3. Scoop seeds out of squash and discard. Slice each half widthwise into ¼-inch thick slices.
  4. Peel onion. Quarter it, then separate the layers.
  5. Wash grapes, then remove each from the stem.
  6. Transfer squash, onions, and grapes to a baking sheet. Drizzle with olive oil, salt, and pepper and toss to coat.
  7. Roast for thirty minutes, stirring halfway through with a spatula.
  8. Remove from the oven and stir again. Lay sausages on top.
  9. Roast for thirty more minutes, until sausages are browned and cooked through.
