This Brown Butter Balsamic Brussels Sprouts Pasta is a quick and easy weeknight dinner that's perfect for winter. Nutty browned butter, a few chunks of pancetta, and a splash of tart balsamic vinaigrette perfectly complement thinly shaved brussels sprouts.

Ingredients

  • ½ pound pasta
  • 2 teaspoons sea salt, divided
  • 2 tablespoons butter
  • 4 ounces pancetta
  • 16 ounces shaved brussels sprouts
  • 2 tablespoons balsamic vinegar
  • ½ cup grated parmesan cheese
  • 1 teaspoon black pepper

Directions

  1. Bring a large pot of water to a boil.
  2. Add pasta and one teaspoon salt.
  3. Cook according to package directions, then drain.
  4. Meanwhile, heat butter in a large pan over medium heat. Let cook, swirling pan regularly so it doesn’t burn, until butter is fragrant and browned, about three minutes.
  5. Add pancetta and sauté until lightly browned, three to four minutes.
  6. Add brussels sprouts and sauté, stirring frequently, until tender and caramelized, about ten minutes.
  7. Add balsamic vinegar and remaining teaspoon salt. Toss to coat, then cook a few more minutes.
  8. Add drained pasta, parmesan, and black pepper, and toss to coat.
