I just realized that I’ve been blogging here for just about two months now. And wow, what a yummy couple of months it’s been! If there’s one thing I’m grateful for, it’s how much motivation this whole blogging thing gives me to cook really good food. Developing recipes and cooking and taking fun photos – everything that goes into a blog like this – it’s such a great opportunity to try my hand at new recipes – from scalloped potatoes to French onion soup to homemade salted caramel sauce. And don’t get me wrong, I absolutely love this type of experimentation. But there’s also something special to be said for recreating old favorites. Especially this time of year – with the cold weather, and holiday vibe – I love to revisit our favorite family recipes. And these cookies are definitely high on that list.

These triple chocolate cookies were added to our family’s rotation of Christmas treats by my aunt, and pretty quickly became a total crowd favorite. I still have memories of making big batches of this rich, chocolaty dough at Aunt Sally’s house. And memories of sneaking into the kitchen with my brother to grab a couple for a late-night snack. These cookies are awesome, mostly because they pack a serious chocolate punch. The buttery dough is loaded with plenty of rich cocoa powder as well as pure melted chocolate. A large handful of chocolate chips perfectly rounds out the sweet and rich chocolate trifecta. These cookies are incredibly soft and chewy, with a nice, crunchy lid. They would certainly be delicious any time of year, but in our house they’re the perfect Christmas treat!

Triple Chocolate Cookies

These Triple Chocolate Cookies are one of my family's favorite Christmas treats. They're rich, sweet, and loaded with cocoa powder, melted chocolate, and a generous handful of chocolate chips.

Ingredients

  • 4 ounces unsweetened chocolate
  • 2 cups (12 ounces) semisweet chocolate chips, divided
  • 6 tablespoons butter
  • ½ cup flour
  • 2 tablespoons cocoa powder
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • 3 eggs
  • 1 cup sugar
  • 2 teaspoons vanilla extract

Directions

  1. Place unsweetened chocolate, one cup of the chocolate chips, and butter in a glass bowl.
  2. Microwave in 30-second increments, stirring regularly, until melted and smooth, about two minutes.
  3. Let chocolate mixture cool for about five minutes.
  4. Meanwhile, in a small bowl, whisk together flour, cocoa powder, baking powder, and salt.
  5. In a large mixing bowl, whisk together eggs and sugar until thick and pale, about two minutes.
  6. Add cooled chocolate mixture and vanilla and stir until well mixed.
  7. Add flour mixture and fold together until just combined.
  8. Gently fold in remaining one cup of chocolate chips.
  9. Cover dough and refrigerate for at least an hour and up to overnight.
  10. To bake cookies, preheat oven to 350°. Line two baking sheets with parchment paper.
  11. Scoop rounded tablespoons of dough and roll them into balls with your hands. Place on the prepared baking sheets.
  12. Bake until firm around the edges but still soft in the center, about thirteen minutes.
