I’ve been trying to read more these past couple months. When I was growing up, it was one of my very favorite things to do. TV, and movies, I could skip. But books – just keep my bookshelves stocked, and I was a happy girl! I would dive into a new book the minute I arrived home from school, and often sped through to the end before bedtime.

Ahh, if only I still had so much time to read. These days, what with work, social activities, all the time I spend cooking, and, yes, the TV I watch, it often seems that there’s no space in the day to pick up a book. So, recently, I’ve been more deliberate about trying to set aside thirty minutes before bed to read. Specifically, I’ve been loving a series of mystery novels by Irish author Tana French. I flew through her first book while on vacation in Cape Cod, finishing the lengthy tome in just under four days. Needless to say, I’d recommend it. I quickly devoured another, and now am knee deep in the third. If you like mystery and suspense, give her a try!

I love a dish that’s simple to prepare, and is both elegant and comforting. These scalloped potatoes fit the bill perfectly. Layers and layers of thinly sliced spuds are engulfed in a rich, creamy sauce, with plenty of melty cheddar cheese. I used a combination of white and sweet potatoes because I love that sweet and hearty combination, but feel free to stick to one of the other, if you prefer. These scalloped potatoes would be equally perfect for Christmas dinner as for an easy weeknight meal – I hope you enjoy!

Scalloped Potatoes

These Scalloped Potatoes are the perfect winter side dish. Thinly sliced spuds are layered with a rich, creamy sauce and plenty of melty cheddar cheese.

Ingredients

  • 4 tablespoons butter
  • ½ onion
  • ¼ cup flour
  • 2 cups milk
  • 1 cup heavy cream
  • 2 teaspoons sea salt
  • 1 teaspoon freshly ground black pepper
  • 3 large russet potatoes
  • 3 large sweet potatoes
  • 8 ounces cheddar cheese

Directions

  1. Preheat oven to 350°. Butter a large glass baking dish.
  2. Melt butter in a medium pot over medium heat.
  3. Peel and dice onion.
  4. Add chopped onion to the pot and cook, stirring occasionally, until soft and lightly browned, about five minutes.
  5. Sprinkle the flour over the onions and stir together. Cook, stirring constantly, for two minutes.
  6. Slowly pour in the milk, stirring constantly. Let cook, stirring regularly, for another two minutes.
  7. Add cream, salt, and pepper. Raise heat to medium-high and cook for two more minutes.
  8. Meanwhile, scrub white and sweet potatoes under cold water, then dry.
  9. Carefully slice into one quarter inch thick slices.
  10. Grate cheese.
  11. Pour about one third of the creamy sauce into the prepared pan and spread evenly.
  12. Arrange half of the potato slices in a layer in the pan, alternating between white and sweet, overlapping slices to fit snugly.
  13. Top with another one third of the creamy sauce, then sprinkle with half of the cheese.
  14. Repeat with remaining potato slices, sauce, and cheese.
  15. Cover dish with foil. Bake, covered, for forty minutes, then remove foil and continue baking, uncovered, until bubbling and golden brown, about thirty more minutes.
