This super easy and delicious salmon recipe was taken straight from the mind of my mom. Seriously, I sat down with her and simply asked for the instructions, step by step. See, my mom used to make this berry glazed salmon all the time when I was growing up. It was one of the many memorable dinners she lovingly prepared for our family. Lucky for me and my brother, both of my parents are great cooks, and they always prioritized taking the time to eat dinner together as a family.

But back to salmon. This is the easiest weeknight preparation of my very favorite type of fish. A sweet, syrupy glaze made with blackberry jam and white wine perfectly pairs with the rich, flaky fish. Because you all know that that sweet-and-savory combination is my favorite. I’d serve this salmon dish with a fresh green salad or roasted broccoli for a light and filling dinner that’s certain to please even the pickiest of omnivores!

Berry Glazed Salmon

This Berry Glazed Salmon is the easiest and most delicious way to prepare my favorite fish! A sweet sauce made with blackberry jam and white wine perfectly complements the rich, flaky fish.

Ingredients

  • 2 tablespoons butter
  • 1 clove garlic
  • 2 salmon fillets (about one pound total)
  • ¼ cup white wine
  • ¼ cup blackberry jam

Directions

  1. Melt butter in a skillet oven medium heat.
  2. Peel and mince garlic, then add to the pan.
  3. Let garlic cook, stirring frequently, until lightly browned, about two minutes.
  4. Add salmon fillets to the pan, skin side down.
  5. Let salmon cook until skin is crispy, about six minutes.
  6. Flip salmon, then let cook about four minutes more. The fish should not be quite cooked through yet.
  7. Remove salmon onto a plate and set aside.
  8. Add wine to the pan and stir to deglaze.
  9. Then, add jam and stir to combine.
  10. Let cook for a minute or so, then reduce heat to medium-low.
  11. Add salmon fillets back into the pan.
  12. Spoon the jam sauce over the fish, then let sit until cooked through, about four more minutes.
  13. Serve with the remaining sauce poured over the salmon.
