Who… wants… pizza for dinner?! You guys, I feel like making homemade pizza is such a fun and underrated activity. Not only is the resulting product amazingly delicious, but it can be as difficult (homemade dough, lots of complicated toppings) or as easy (pre-made dough, the simplest toppings) of an activity as you want. Plus, making the pizza yourself means that each pie is totally customizable!
Whether you do decide to make your dough from scratch, or pick some up at the store (I got mine from Trader Joe’s) the real fun comes in assembling and choosing your toppings! I’m imagining all sorts of fun seasonal combinations – shaved asparagus and fresh peas for spring, so much corn (obviously) for summer, and roasted butternut squash – plus maybe some sage and bacon – for fall. Or, put out little dishes of lots of different ingredients and let your eating companions assemble their own favorite creations. I think that making pizza this way at home would be such a fun activity for kids, or a date night!
For this particular pizza – given that it’s the middle of January – I wanted all of the warm, comforting, wintery things possible. So I started by cooking up some Italian sausage – just a few minutes in the skillet, and look at that hearty, savory, meaty goodness. Then, I caramelized an onion, threw in some sliced mushrooms, and finished it off with lots of kale. All that’s left is a generous pour of tomato sauce and a bit of cheese to round everything out. This pizza is easy enough to pull off even on a busy evening, and delicious enough to wipe away any thoughts of takeout. I hope you enjoy!
