Yet when I take the time to think about it for a second, I realize that there are many small pleasures that make me inordinately happy. I love treating myself to a simple bouquet of fresh flowers at the grocery store, taking five minutes to play a crazy game of fetch with my roommate’s beyond adorable pups, lighting a sweet-smelling candle, or curling up with a mug of tea and a good book before bed. For me, of course, food (and dessert!)-lover that I am, sweet indulgences definitely have to be on this list, too. And this grapefruit yogurt pound cake definitely makes the cut. This cake is pretty much everything that I could ever want in a dessert – dramatic much?! It’s so rich and buttery, as all the best pound cakes are. It’s bursting with tart citrusy flavor, from grapefruit zest, simple syrup, and a sweet grapefruit glaze. And, it may be the most moist cake I’ve ever made, meaning that it lasts beautifully on the counter. This little baby will wait patiently until you need a little slice for an afternoon pick-me-up or after dinner snack. It is the perfect treat to savor and enjoy, and sure to bring a sweet smile to your face!

Grapefruit Yogurt Pound Cake

This Grapefruit Yogurt Pound Cake is rich, sweet, and super tart! It's the perfect simple cake for afternoon tea or a rustic dessert.

Ingredients

  • 1 ½ cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 3 eggs
  • 1 cup plain yogurt
  • 1 ¼ cups sugar, divided
  • 1 teaspoon vanilla extract
  • 2 large grapefruits
  • ½ cup canola oil
  • 1 cup powdered sugar

Directions

  1. Preheat oven to 350°. Grease a loaf pan.
  2. In a small bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, whisk together eggs, yogurt, one cup sugar, and vanilla extract.
  4. Zest grapefruits, then half and juice them.
  5. Add grapefruit zest to yogurt mixture and whisk to combine.
  6. Add flour mixture and stir until just combined.
  7. Add the canola oil and fold together with a rubber spatula until smooth.
  8. Transfer batter to prepared pan. Bake until a tester inserted in the center comes out clean, about fifty minutes. Let cool for ten minutes.
  9. Meanwhile, place one quarter cup grapefruit juice and remaining one quarter cup sugar in a small saucepan.
  10. Place over medium heat and let cook until liquid is simmering and sugar is dissolved, about five minutes.
  11. Let cool slightly.
  12. While cake is still warm, pour syrup over top and allow it to soak in. Then, let cake cool completely.
  13. Finally, to make a glaze, whisk together powdered sugar and two tablespoons grapefruit juice. Pour over cooled cake.

  3. Oh my goodness! This was simply amazing!! I made the cake this afternoon and fed it to my family after dinner and it was demolished within 10 minutes. My dad kept going on and on about how good it was and asked I make another with the left over juice. As he said after ate two thick slices, 11/10 would recommend!
