There are lots of things I love about living in a big city. The close proximity to so many great restaurants. My walk to work – past shops, along the trolley car route, and through Union Square – which is certainly never boring. And the fact that exploring every weekend feels like a new adventure, just to name a few. But all of the long lines and crowds definitely aren’t San Francisco’s best quality. For instance, said stroll through Union Square is often more of a pushing-and-squeezing fight through a mob of tourists and business people. Another time these crowds never fail to appear is weekend mornings, at all of the city’s most popular brunch spots.

Brunch in San Francisco – as, I’m sure, in many other big cities – can be seriously crazy. To many people, it seems, brunch is like a religion. I have to admit, it can be really fun to plop down at a big table with a group of friends, order a round of drinks, and dig into an indulgent meal of all the very best food groups. I mean, seriously. With pancakes, waffles, bacon, and potatoes, we all know that brunch is the best meal of the day. But when the wait for a table is an hour, or more, some of the magic of this activity is definitely lost.

So, we must search out some reliable alternatives! My boyfriend and I recently discovered a little deli in our neighborhood that serves delicious, classic brunch options – the french toast is seriously superb! And, most importantly, there’s never a line. We’ve also taken to cooking weekend brunch at home more often, too. Sometimes we’ll make something easy, like toast, but pancakes have also been on heavy rotation recently. And this particular recipe is my very favorite. It’s a super simple rendition of classic buttermilk pancakes – little more than flour, sugar, buttermilk, melted butter, and an egg. Each pancake is light, fluffy, and not too sweet, with a perfect buttery, golden exterior. I love the subtle tang from the buttermilk, especially paired with fresh berries and plenty of maple syrup. Whenever I’m craving a delicious and hearty brunch at home, I’ll be making these perfect buttermilk pancakes – for years to come!

Perfect Buttermilk Pancakes

  • Servings: 8 6-inch pancakes, for 4 people
  • Difficulty: Easy

These Buttermilk Pancakes are so incredibly light and fluffy. This easy recipe is my go-to for the most delicious pancakes.

  • Adapted from 100 Recipes.
  • Feel free to replace the buttermilk with the juice of one lemon plus enough milk to reach two cups of liquid. Combine, then let sit for about five minutes to sour the milk.
  • You may cook two pancakes at a time, in two pans, to speed up the process.

Ingredients

  • 2 cups flour
  • ¼ cup sugar
  • ½ teaspoon baking soda
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 egg
  • 2 cups buttermilk
  • 4 tablespoons butter, melted
  • canola oil and butter, for cooking

Directions

  1. In a small bowl, whisk together flour, sugar, baking soda, baking powder, and salt.
  2. In a large bowl, whisk together egg, buttermilk, and melted butter.
  3. Add flour mixture to buttermilk mixture and gently whisk together until just combined.
  4. Heat a skillet over medium heat until hot. Add a bit of oil and a dab of butter and let melt to coat pan.
  5. Using a one half-cup measure, scoop some batter onto the center of the pan.
  6. Let pancake cook until large bubbles appear on the surface, about two minutes.
  7. Carefully flip pancake. Continue cooking until bottom is golden brown, about two more minutes.
  8. Transfer pancake to a plate.
  9. Repeat with remaining batter, adding more oil and butter to the pan if necessary.
