I’m going to be completely honest with you guys today. These scones are a little finicky. But they’re also so, so worth it, I promise. I’ve used my go-to recipe, with plenty of butter and fresh buttermilk, and thrown in a bunch of chopped strawberries and white chocolate chips for the most amazing sweet and fruity treat.

The trick with scones – or any baked good, really – is to not overwork the dough, or your creation will come out of the oven tough. We need a light hand here, people. But that’s where things get a little tricky, with this scone recipe. What’s normally a really easy dough to pull together gets a bit more complicated with the addition of lots of fresh, juicy berries. The ratio of buttermilk to flour is perfect, such that a couple quick kneads produce an easy-to-roll-out yet still perfectly light and flaky scone, but the strawberries make everything a little bit sticky. I think it must be the extra moisture, the sweet and syrupy juice that adds so much flavor. So we’re going to have to tread carefully with this one here. Once you’ve got all the ingredients added, turn everything out onto a very well floured board. Knead just a couple times, making sure not to overmix! Yes, your hands will get covered in dough, but that’s part of the fun, right? It’s ok if the dough isn’t perfectly smooth, or the strawberries aren’t perfectly distributed – delicious is better than perfect anyways, isn’t it?

And I promise you, totally and 100%, that these scones are worth a little extra care. I’ve made a lot of scones recently, but these are definitely my favorite. The dough is, as always, rich, flaky, buttery, and just a little tangy. The plentiful strawberries mixed in caramelize and sweeten in the oven into the perfect little pockets of almost jammy goodness. A hit of pure, rich sweetness from the white chocolate chips mixes perfectly with the fruity berries. These scones are everything rich and tasty you’d want in a breakfast treat, made just right for spring.

Strawberry White Chocolate Scones

These Strawberry White Chocolate Scones are a fruity and decadent breakfast treat. Fresh red strawberries and sweet white chocolate chips combine with a rich, buttery, flaky dough.

Ingredients

  • 2 cups flour
  • ½ cup sugar
  • ½ teaspoon baking soda
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 12 tablespoons butter, chilled
  • 1½ cups diced strawberries
  • ½ cup white chocolate chips
  • ¾ cup buttermilk

Directions

  1. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking soda, baking powder, and salt.
  3. Slice butter into small chunks and add to flour mixture. Using your fingers, rub butter into flour.
  4. Add diced strawberries and white chocolate chips. Toss together gently until combined.
  5. Add buttermilk and mix just until ingredients come together into a loose dough.
  6. Dup dough out onto a floured board. Knead gently a couple times, until dough is smooth.
  7. Pat dough into a circle one inch thick. Cut out rounds of dough using a floured drinking glass and transfer to the prepared baking sheet.
  8. Place in the fridge for fifteen minutes to chill. Meanwhile, preheat oven to 375°.
  9. Bake scones until golden brown, about twenty five minutes.
