I’m hanging out in Thailand right now and there’s a torrential rainstorm happening outside but let me tell you, this place is so amazing that I don’t even mind the rain one little bit! Adam and I are staying at a tropical resort right on the beach, and every bit of this land is pure paradise. The ocean, lapping gently over the smooth, soft sand, is warm, salty, and so crystal clear. Everywhere I turn I see bright green palm trees and beautiful red and orange tropical flowers. The sunsets here are absolutely magical: fiery reds and oranges, soft pinks and purples, all mix with the brilliant blue sky and towering cliffs.

Among all of the relaxing, swimming, and sunbathing, we’ve been doing plenty of adventuring, too! We hopped on a speedboat tour of Phi Phi Islands, where we snorkeled and hung out with a tribe of very friendly monkeys. We climbed over one thousand steps to reach the famous Buddha statue at the Tiger Cave Temple. I made these Thai chicken lettuce wraps right before we left for vacation, but they fit in perfectly with the easygoing vibe of this trip! They’re fresh, crisp, light, and filled with produce – so basically the perfect easy dinner for spring or summer! The recipe starts with a delicious sweet and tart Asian vinaigrette – think lime juice, soy sauce, rice vinegar, and sesame oil. Half is used to marinate chopped chicken breasts, which are then thrown in a skillet over high heat. The meat is piled into crisp, crunchy romaine leaves and topped with chopped carrots and cucumber, creamy chunks of avocado, and more of that yummy, sweet dressing. I’m sad to be heading home from this amazing vacation in a couple days, but perhaps I’ll whip up another batch of these easy lettuce wraps to make the transition back to real life just a little bit easier!

Thai Chicken Lettuce Wraps

These Thai Chicken Lettuce Wraps are a light and filling dinner! Crisp lettuce leaves, flavorful marinated chicken, creamy avocado, and bright veggies are all paired with a sweet and tart Asian vinaigrette.

Ingredients

  • juice of 4 limes
  • 1 teaspoon soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 2 tablespoons canola oil
  • 1 tablespoon sugar
  • 1 pound boneless, skinless chicken breasts
  • 1 head romaine lettuce
  • 1 carrot
  • 1 cucumber
  • 1 avocado

Directions

  1. To make a vinaigrette, whisk together lime juice, soy sauce, rice vinegar, sesame oil, canola oil, and sugar.
  2. Chop chicken breasts into small chunks.
  3. Place in a large bowl. Top with half of the vinaigrette and toss to coat chicken. Let sit for fifteen minutes.
  4. Meanwhile, wash and dry lettuce leaves.
  5. Wash carrots and cucumber. Grate carrot, and slice cucumber into thin sticks.
  6. Half avocado. Remove the pit, then slice each half into small cubes.
  7. Just before serving, heat a skillet over medium-high heat. Drain chicken, discarding liquid, and add to the skillet.
  8. Let cook, stirring occasionally, until cooked through, about five minutes.
  9. Fill lettuce leaves with cooked chicken, grated carrots, sliced cucumber, and avocado cubes. Drizzle with remaining vinaigrette.
