Happy Monday! Don’t you wish that all Monday mornings could start off with pancakes?! Ahh, how blissful would that be? Ever since I returned home from my vacation, I’ve been trying to implement a new morning routine. And thanks to waking up a bit earlier than normal from jet lag, so far it’s going pretty well!

It used to be that my weekday mornings looked like this: roll out of bed at eight, jump in the shower, quickly throw on some makeup and my clothes, grab a fast breakfast, and then head out for my thirty minute walk to work. Quick, yes. Relaxed and unrushed, not so much. And I found that even with sleeping quite late, I was still tired throughout the day! So, I thought it might be a nice idea to try working out in the morning, to see if that would give me some extra energy throughout the day.

So now, my mornings look a little more like this: wake up at seven, head to the gym for a forty-five minute (ish) workout, return home for my shower, and then make a nice breakfast and read for a bit before heading out the door. I used to workout every morning in college, and to be honest, I’ve missed that part of my routine! Now, not every single morning looks like this, but on days when I do go to the gym before work, I find that I’m feeling more invigorated. It’s also nice to knock that item off the to-do list first thing in the morning.

But yes, I do still wish that my mornings could feature a nice leisurely pancake breakfast, instead. Especially if said pancakes were this delicious lemon ricotta variation. As you can see from the pictures, these pancakes are so light and airy! A combination of fresh ricotta cheese and whipped egg whites create this almost cloud-like texture. Plenty of fresh lemon zest and juice add the perfect amount of tart tanginess, which pairs perfectly with the rich ricotta cheese. I love to serve these pancakes with fresh sliced strawberries and a drizzle of honey, but they would also be amazing with classic maple syrup and a sprinkle of blueberries. Lemon Ricotta Pancakes

  • Servings: 8 6-inch pancakes, for 4 people

These Lemon Ricotta Pancakes are the most light and airy pancakes you can imagine! Creamy ricotta cheese and bright, tart lemon combine for the most delicious breakfast treat.

  • You may cook two pancakes at a time, in two pans, to speed up the process.

Ingredients

  • 1 cup flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 eggs, separated
  • ¾ cup milk
  • 1 cup ricotta cheese
  • 1 teaspoon vanilla
  • zest and juice of 2 lemons
  • canola oil and butter, for cooking

Directions

  1. In a small bowl, whisk together flour, sugar, baking powder, and salt.
  2. In a large bowl, whisk together egg yolks, milk, ricotta, vanilla, and lemon zest and juice.
  3. Add flour mixture to liquid mixture and stir together until just combined.
  4. In a clean bowl, beat egg whites until stiff. Add to batter and fold together just until smooth, being careful not to deflate whites.
  5. Heat a skillet over medium heat until hot. Add a bit of oil and a dab of butter and let melt to coat pan.
  6. Using a one half-cup measure, scoop some batter onto the center of the pan.
  7. Let pancake cook until large bubbles appear on the surface, about two minutes.
  8. Carefully flip pancake. Continue cooking until bottom is golden brown, about two more minutes.
  9. Transfer pancake to a plate.
  10. Repeat with remaining batter, adding more oil and butter to the pan if necessary.

  1. Seriously, you’re right. Wouldn’t it be nice to have a relaxing pancake breakfast? Maybe with a yummy cup of coffee? We’re all just so busy! That’s what my weekends are for 😉
