My mom and aunt visited San Francisco this past weekend and we had the best time hanging out and exploring the city together! Our adventures included a tour of my office, strawberry shortcake at my apartment for Mother’s Day brunch, and a fun Italian dinner followed by late night (decaf) Irish coffees at the iconic Buena Vista cafe! Also, the weather was absolutely amazing – warm, clear, and sunny, with a slight breeze and none of that pesky Bay Area fog. Ahhh, I wish every weekend could be so perfect!

I think my most favorite activity was our stop on Saturday morning at the Ferry Building. If you’ve never been to San Francisco, this is a must-visit – especially for you foodies! The entire marketplace is filled with the best local food vendors – everything from fresh cheese made just over the Golden Gate Bridge to amazing ice cream and coffee to olive oil, seafood, and even empanadas! Saturday morning is the farmer’s market, so maybe a hundred more stalls were set up outside with all sorts of fresh produce, baked goods, and flowers. We had the best time walking around, chatting, sampling fruit, and taking in the spectacular views of the bay. Of course, Adam and I had to introduce my mom and aunt to the city’s best ice cream, too! 🙂

I was surprised to see that practically every fruit stall at the market was selling loads and loads of fresh red cherries! I guess cherry season really snuck up on me. Not that I’m complaining, of course! So, it’s definitely time for me to start thinking about ideas for some cherry recipes to share with you. But today, we’re revisiting rhubarb, since it’s still spring for another month or so. This recipe combines three of my favorite things: fresh, tart rhubarb; sweet maple syrup; and good old rolled oats! Seriously, I love oatmeal for breakfast! So warm, hearty, and filling – definitely one of my favorite weekday breakfasts. This recipe kicks things up a notch with the simplest and most tasty sweet and tart topping – a quick maple compote made of rhubarb and maple syrup that pairs absolutely beautifully with the oats. Spend ten minutes tonight whipping up a batch of this compote and trust me – your breakfasts for the rest of the week will be absolutely to die for!

Sweet Maple Rhubarb Oatmeal

This Sweet Maple Rhubarb Oatmeal is an amazing warm and cozy breakfast. Simple oatmeal is topped with a sweet and tart compote made from spring rhubarb and maple syrup.

  • The maple rhubarb compote may be made ahead of time. Store it, covered, in the refrigerator.

Ingredients

  • 1 cup sliced rhubarb
  • ¼ cup maple syrup
  • 1 teaspoon vanilla
  • zest of 1 lemon
  • 1 cup rolled oats
  • 2 cups almond milk
  • ½ teaspoon sea salt
  • ¼ cup chopped pecans, optional

Directions

  1. To make the maple rhubarb compote, combine sliced rhubarb and maple syrup in a small pot over medium heat.
  2. Cook, stirring occasionally, until rhubarb softens and begins to break down, about ten minutes.
  3. Remove from heat and stir in vanilla and lemon zest.
  4. Meanwhile, to make oatmeal, combine oats, almond milk, and salt in a medium pot over medium heat.
  5. Cook, stirring regularly, until oats are soft and liquid is absorbed. This will take about five minutes for quick cooking oats, or longer for regular oats.
  6. Divide cooked oats between two bowls. Top with maple rhubarb compote and chopped pecans, if desired.
