It’s that time of year again… ice cream time!!! As I mentioned earlier this week, I’m in a full blown summer mood. The farmers’ market is overflowing with sweet cherries and bright orange apricots and I’m just starting to notice fresh corn on the cob popping up at Trader Joe’s. And with summer comes, of course, the need to indulge in an ice cream cone pretty much every day.

One summer in college I worked at a small local ice cream shop and it was basically the most fun job I’ve ever had. We’d make all of the ice creams from scratch right there in the back kitchen, with super high-quality ingredients: fresh blueberries, rich dark chocolate, big batches of homemade salted caramel, and lots of fresh strawberries. Surprisingly, my favorite part of the gig wasn’t even all of the free samples. Rather, I really loved the small act of talking to and serving our customers, simply because it was amazing and awesome to see what joy even a simple ice cream cone can bring. We’d get in cute older couples, groups of young teenagers, and lots of families. My favorite was watching the young kids eagerly await their cone and the joy that spread across their face with that first bite. So yes, to me summer just isn’t complete without plenty of ice cream!

I’ve been wanting to try making my own ice cream for a while, but you can be sure that I have no room for a full blown ice cream maker in my little apartment kitchen. So, I did some research, and discovered that a simple combination of beaten cream and sweetened condensed milk can be mixed together and frozen into a pretty spectacular dupe of our favorite frozen treat. This ice cream may not be quite as creamy as your favorite store-bought variety, but it’s still perfectly sweet and delicious, and I absolutely love knowing that it came from my very own kitchen. To this batch I added a whole bunch of my favorite sweet strawberries – for the perfect light pink, sweet and fruity concoction – but I can’t wait to experiment with more flavors soon. Here’s to a summer filled with plenty of ice cream!

No Churn Strawberry Ice Cream

This No Churn Strawberry Ice Cream is a fantastic and easy homemade dessert! The classic treat is sweet, fruity, and super creamy.

Ingredients

  • 16 ounces fresh strawberries
  • 1 14-ounce can sweetened condensed milk
  • 2 cups heavy cream
  • 1 teaspoon vanilla
  • pinch salt

Directions

  1. Line a loaf pan with parchment paper.
  2. Wash strawberries. Slice each berry into quarters, then place in a food processor.
  3. Pulse until mostly broken down but some small chunks remain.
  4. Transfer to a large bowl.
  5. Add sweetened condensed milk and whisk together until smooth.
  6. In another bowl, beat heavy cream until soft peaks form.
  7. Add vanilla and salt and continue beating until stiff peaks form.
  8. Add one third of the whipped cream to the strawberry mixture. Fold together until combined.
  9. Add remaining whipped cream and fold together, being careful not to deflate the cream, until smooth.
  10. Transfer to prepared loaf pan. Cover with plastic wrap and freeze until solid and scoopable, at least six hours.
  11. Let soften at room temperature for fifteen minutes before serving.
