Luckily, today’s recipe is easy-peasy. It literally takes five minutes to throw together, and the food processor does pretty much all of the work for us. It’s delicious, too, so what could be better? Have you ever made hummus before? To be honest, this was my first time. It’s crazy how simple this delicious dip really is – for the base, garbanzo beans and a bit of olive oil are really all you need. The mix-ins, from there, are up to you: fresh lemon juice, sea salt, a spoonful of tahini, or herbs. Get crazy with it!

Knowing me, I couldn’t just make any old plain hummus. So, I started thinking, and came up with this interesting and creative combination. I’ve added lots of creamy avocado, cilantro, and tart lime juice for a super fresh and tasty take on classic hummus. Imagine a sort of hummus-meets-guacamole combination, and you’ll have a good idea where I’m going with this. And I couldn’t have been more pleased with the results! This simple dish is so delicious and absolutely perfect for summer. During the warmer months I love the idea of simple dinners outside, and I’m imagining this avocado hummus as the star of an easy dinner plate, maybe with some fresh chopped veggies, pita squares, and a bit of creamy, salty feta. It would, of course, also make the perfect appetizer or party dish. Enjoy!

This Avocado Cilantro Hummus is an epic and delicious appetizer! Creamy guacamole meets classic hummus for a simple savory dip.

  • Serve this hummus with pita chips and fresh vegetables.

Ingredients

  • ½ cup chopped cilantro
  • ¼ cup olive oil
  • juice of 2 limes
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 15-ounce can garbanzo beans
  • 2 avocados

Directions

  1. Place cilantro, olive oil, lime juice, salt, and pepper in a food processor.
  2. Pulse until cilantro is broken down and mixture is smooth, about fifteen seconds.
  3. Drain and rinse garbanzo beans. Add to the food processor.
  4. Cut avocados in half, remove the pits, and scoop out the flesh. Add to the food processor.
  5. Continue to pulse until beans are broken down and mixture is smooth and creamy, about thirty more seconds.
