Even after eighteen months in the working world, I’m still not really used to sitting at a desk all day. So, I often try to fit in a short walk around lunchtime. It’s nice to get out of the office for a few minutes, to move my legs and get some fresh air. Lately, I’ve been following the same quick loop: about a twenty minute jaunt to the Embarcadero for a quick view of the Bay Bridge, before I circle around and head back.

I happen to pass a pretty renowned San Francisco restaurant on my stroll, and often find myself stopping to sneak a quick peak at the menu. They rotate items often, and some new dish – filled with the most perfect seasonal produce – always catches my eye. Whether fall vegetable fritto misto, avocado salad, or mandarin orange sorbet, I can’t help but immediately crave just a taste. I love to imagine how the various flavors would play together on the palate, how the vibrant colors of the fresh produce might dance side by side on the plate. Although I haven’t ever even stepped foot inside the restaurant, I can picture how these dishes come to life – and my, what fine inspiration that can be.

So, here at home, I tried to recreate those bold flavors and bright colors with the perfect winter salad. Simple, refined, delicious – and a nice balance of bitter, sweet, and tart. I included only a few ingredients, but each is at peak deliciousness during these cold winter months. No doubt, citrus is the star here. Thin slices of oranges and grapefruits are perfectly juicy and zesty. Lemon juice makes an appearance in the easiest of dressings. And endive provides the perfect bitter base to this easy and delicious salad. Perhaps one day I’ll end up at Boulevard for dinner, but until then, I couldn’t be more happy to enjoy this bold and flavorful salad.

Citrus & Endive Salad

This Citrus & Endive Salad is vibrantly flavored and elegantly refined. Citrus is the star of the show, with beautiful slices of orange and grapefruit topping a bitter endive base.

  • If you can’t get your hands on a blood orange, feel free to substitute another orange.

Ingredients

For Salad:

  • ¼ cup walnuts
  • 1 orange
  • 1 blood orange
  • 1 grapefruit
  • 1 head romaine lettuce
  • 2 heads endive
  • 2 ounces crumbled goat cheese

For Dressing:

  • juice of 1 lemon
  • ½ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil

Directions

  1. Place walnuts in a dry pan over medium heat.
  2. Toast, stirring regularly, for about five minutes, until fragrant and golden brown.
  3. Let walnuts cool for a few minutes, then roughly chop.
  4. Meanwhile, wash orange, blood orange, and grapefruit under cold water, then dry.
  5. Place the orange on a cutting board, and run a serrated knife down one side of the fruit to remove a section of the peel. Repeat around the orange to remove the rest of the peel.
  6. Then, turn the orange on its side and slice into rounds.
  7. Repeat with the blood orange and grapefruit.
  8. Wash and dry the romaine and endive, then thinly slice and transfer to a large bowl.
  9. To make dressing, stir together lemon juice, salt, and pepper in a small bowl with a fork.
  10. Slowly drizzle in olive oil, stirring constantly, until a thick dressing forms.
  11. Drizzle dressing over greens and toss well.
  12. Transfer to a platter, and top with sliced citrus, walnuts, and goat cheese.
