After a long day of work and an hour at the gym, it can be difficult to work up the energy – both physical and mental – to make anything too complicated. And yet, I’d rather not have to rely on Uber Eats or takeout too often. Enter: a set of the quickest and easiest dishes that I can whip up in no time!

Some of my standbys are literally so basic it’s almost ridiculous. I’m talking scrambled eggs and avocado toast – both of which I eat more often than I’d like to admit. But hey, they’re easy, filling, and yummy, which is really all I need. However, recently I’ve started focusing on some more substantial standbys – yes, still quick and easy, but that feel more like a real meal, too. Apart from being delicious, my criteria for which recipes fit the bill are pretty straightforward: the dish should be fast to prepare, dirty a minimal number of dishes, and use only a handful of ingredients. So far I’m loving pasta, hearty salads, and this easy salmon dish.

Today, I’m adding a fun new dish to the rotation that’s the perfect remedy for any Chinese food-cravings. This beef and broccoli stir fry uses the simplest of techniques – literally, just searing in a super hot skillet. The hardest part of this whole preparation will be chopping up your broccoli and bell pepper. Once you’ve done that, and stirred together a quick sauce, the entire flavorful dish comes together in a matter of minutes. I love this stir fry because it features a nice balance of protein and plenty of vegetables, feels a little more satisfying than simple scrambled eggs, and is, of course, super delicious. This recipe is an instant weeknight favorite!

Beef & Broccoli Stir Fry

This Beef & Broccoli Stir Fry is the perfect weeknight dinner staple! The delicious dish is loaded with protein and vegetables and comes together in a matter of minutes.

  • Feel free to substitute one pound of chicken breast for the steak.
  • The instructions may appear a bit involved, but they’re really quite straightforward, and this dish is ready in no time. Just remember to chop everything before you begin cooking, and keep your skillet over high heat.

Ingredients

  • 1 pound flank steak
  • ½ cup soy sauce
  • 1 head broccoli
  • 1 red bell pepper
  • 6 garlic cloves
  • 2 tablespoons oyster sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 3 tablespoons canola oil, divided
  • 1 tablespoon freshly grated ginger
  • rice, for serving

Directions

  1. Thinly slice the flank steak against the grain.
  2. Place in a large bowl and toss with ¼ cup soy sauce. Let marinate for at least ten minutes and up to one hour.
  3. Meanwhile, cut the head of broccoli into florets and dice the stem.
  4. Slice the bell pepper in half, remove the stem and seeds, and then slice the halves into thin strips.
  5. Peel and finely mince the garlic cloves.
  6. Just before you start cooking, whisk together remaining ¼ cup soy sauce, oyster sauce, brown sugar, sesame oil, and cornstarch in a small bowl. Set sauce aside to thicken.
  7. Heat one tablespoon oil in a nonstick skillet over high heat until almost smoking.
  8. Drain beef, discarding liquid, and add half to the skillet.
  9. Let cook, stirring once, until browned, about two minutes.
  10. Transfer to a plate and set aside, then repeat with remaining beef.
  11. Add another tablespoon of oil to the skillet and heat until almost smoking.
  12. Add the broccoli and cook, stirring once, for about a minute.
  13. Add one quarter cup water, cover pan, and let broccoli steam for two minutes.
  14. Transfer to a plate and set aside.
  15. Finally, add remaining tablespoon oil to the skillet and heat until almost smoking.
  16. Add bell pepper and cook, stirring regularly, for two minutes.
  17. Add garlic and grated ginger and stir to combine. Let cook, stirring frequently, for one minute.
  18. Whisk sauce to recombine, then add to the skillet. Add beef and broccoli.
  19. Cook, stirring constantly, until sauce is thickened, about one minute.
  20. Serve stir fry over rice.
