It all starts with fatty, salty, rich bacon, cooked up in a skillet until crispy. The meat is tossed with hot spaghetti, grated parmesan, and fresh eggs. And magic! The steam alone cooks up the eggs into a smooth and creamy sauce – a sauce that’s rich with bacon flavor and perfectly coats each strand of pasta. Finish it all off with a bunch of freshly ground black pepper and you’ve got such a quick and hearty bowl of deliciousness.

My mom used to make this pasta all the time when we were growing up, and now that I’ve got a kitchen of my own, I’m happily following suit. What I love most about carbonara is that it feels so simple – literally, only four ingredients – but the taste is undeniably comforting. This is the dish I turn to whenever I need something warm and homey. Whenever I need a hearty and satisfying dinner without too much effort, and whenever I’m craving some simple indulgence. Pasta Carbonara

  • Servings: 6

This Pasta Carbonara is rich, hearty, and so comforting. Spaghetti is paired with bacon, parmesan, and a smooth, creamy egg sauce!

Ingredients

  • 1 pound spaghetti
  • 1 teaspoon sea salt
  • ½ pound sliced bacon
  • 4 eggs
  • ½ cup grated parmesan
  • 1 teaspoon freshly ground black pepper

Directions

  1. Bring a large pot of water to a boil.
  2. Add spaghetti and salt.
  3. Cook according to package directions, then drain.
  4. Meanwhile, slice bacon into one-inch thick pieces.
  5. Place in a dry pan over medium heat and cook, stirring regularly, until fat is rendered and bacon is crispy, about five minutes.
  6. Place eggs in a small bowl and beat until smooth.
  7. After draining pasta, return to pot.
  8. Immediately add bacon and rendered bacon fat and stir to combine.
  9. Then, add beaten eggs, parmesan, and pepper and stir until a smooth, creamy sauce forms.
  10. Serve immediately, topped with additional parmesan.
