Who else needs a little something bright and cheery today? This has seemed like pretty much the longest week ever, and it’s been so gloomy and rainy here in San Francisco. I literally feel like I haven’t seen the sun in weeks. Even with the rain, I’ve still been walking to and from work – mostly because getting soaked still seems like a better alternative to the extra crowded and stuffy city buses. But I can definitely say that my hair is not happy with this situation!

It’s Friday, however, which means that things are looking up! I’m very excited to relax this weekend and hopefully have a little fun. And it even sounds like the rain may be letting up soon – if it does, I’d like to have a picnic in the park and enjoy some quality time outside. Yes, this may be me jumping the gun a little bit on spring activities – willing the sun to shine and the clouds to disappear – but I don’t really care! Something else I’d definitely like to do this weekend is make another batch of this incredibly delicious and fun guacamole.

Guacamole is seriously one of the most easy and delicious snacks out there. I mourn for people who live in a place where good avocados aren’t regularly available. I love a creamy, flavorful, perfectly ripe avocado on toast, in a salad, but especially whipped up into guacamole and served with plenty of crunchy corn chips. This version combines only a couple of ingredients: tart fresh lime juice is a perfect contrast to the rich avocados, and a good dash of sea salt is a necessity. But the real star of the show is fresh pomegranate arils, which we stir in right at the end. The sweet, juicy, fruit offers a perfect bright note, and I absolutely love the striking visual effect of the green and red. This pomegranate guacamole is the newest fun and cheery addition to my favorite winter recipes!

Pomegranate Guacamole

This Pomegranate Guacamole is a fun and festive appetizer! Sweet, fresh pomegranate pairs deliciously with rich, creamy avocado.

  • Feel free to add a bit of finely diced jalapeño, if you like your guacamole spicy.
  • I topped my guacamole with some additional pomegranate arils and some chopped cilantro.

Ingredients

  • 4 avocados
  • juice of 1 lime
  • 1 teaspoon sea salt
  • 1 pomegranate

Directions

  1. Half avocados. Remove the pits, then slice the flesh into cubes.
  2. Using a spoon, scoop cubes out into a large bowl.
  3. Add lime juice and sea salt.
  4. Using a fork, smash together until mostly smooth but some chunks of avocado remain.
  5. Halve pomegranate and remove arils. Add to guacamole.
  6. Stir until combined.
