You guys know by now that I love to cook seasonally, and many of the dishes that pop up in my mind are rooted in whatever great, fresh produce is currently available. I love making light, fruit-filled salads in the spring and summer; warm, hearty baked goods in autumn; and rich, decadent, comforting dinners during the cold winter months. But one struggle I face when cooking in winter is figuring out how to avoid making everything too rich and too heavy.

But there definitely comes a point when some lightness is the perfect thing to balance everything out. When there’s been just one too many cheesy casserole or creamy sauce and all we want is some delicious, fresh, vegetable goodness. On days like those, even when it’s still winter, I turn to simple yet hearty salads, like this one. The great thing about this lemony roasted broccoli salad is that, while I consider it more of a wintery dish, it’s really perfect anytime of the year. In fact, whenever I have leftover roasted broccoli, I often love to throw it in a simple salad. It provides so much heft and flavor, and I love how a simple vinaigrette soaks into the florets a bit for that much more flavor. Today, I’m adding lots of fresh lemon juice, some minced garlic, rich goat cheese, creamy avocado, and a burst of sweet raisins. This is seriously the perfect nourishing, wholesome, and fresh yet hearty dish for these last few weeks of winter.

Lemony Roasted Broccoli Salad

This Lemony Roasted Broccoli Salad is so nourishing and wholesome. The fresh yet hearty salad is filled with goat cheese, avocado, and sweet raisins.

Ingredients

For Salad:

  • 1 head broccoli
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • ¼ teaspoon chili flakes
  • juice of 2 lemons
  • 1 garlic clove
  • 1 head romaine lettuce
  • 1 avocado
  • 2 ounces crumbled goat cheese
  • ¼ cup raisins

For Dressing:

  • ½ teaspoon dijon mustard
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil

Directions

  1. Preheat oven to 425°.
  2. Cut the head of broccoli into small florets and dice the stem. Transfer to a baking sheet.
  3. Add olive oil, sea salt, and chili flakes and toss to combine.
  4. Roast broccoli until crispy and browned, about twenty five minutes.
  5. Meanwhile, peel and mince garlic.
  6. After removing from the oven, immediately toss broccoli with lemon juice and garlic. Let cool slightly.
  7. Meanwhile, to make dressing, stir together mustard, vinegar, salt, and pepper in a small bowl with a fork.
  8. Slowly drizzle in olive oil, stirring constantly, until a thick dressing forms.
  9. Wash and dry lettuce, then thinly slice the leaves and transfer to a large bowl.
  10. Add dressing and toss to combine.
  11. Half avocado, remove the pit, and slice into small cubes. Using a spoon, scoop out the cubes and add them to the salad bowl.
  12. Add goat cheese, raisins, and roasted broccoli, then toss to combine everything.
