It’s countdown to trip time! I mentioned a few months ago that my boyfriend Adam and I were planning a vacation in Asia for later this year… well later this year is almost here! In fact, we’re leaving in two weeks! Our flights are booked, hotel is chosen, and we just submitted our visa applications (crossing our fingers everything goes smoothly and they’re in our hands in the next couple days!). Now I’m thinking about packing lists and researching sites to see and activities we definitely don’t want to miss out on.
I’ve also been busy trying to get some recipes developed and photographed to post while we’re away. It’s been a lot (I think I’ve made six different dishes in the last week alone…) but I absolutely love the work. Especially because I feel like it’s finally appropriate to start thinking about spring! Flavorful dishes that are light, fresh, and filled with produce – and yep, I’ve got strawberries coming your way soon! But I’ve also been trying to focus on easy, healthy, and quick weeknight dinners.
This lemon tomato baked salmon is a real favorite – something I’ve made countless times over the last year! I usually pick up all of the ingredients at Trader Joe’s on my way home from work: a few lemons, a pint of cherry tomatoes, and a couple salmon fillets. And voila, dinner in twenty minutes! The baked salmon is rich, flaky, and so flavorful. The tomatoes burst in the oven, caramelizing and releasing all of their sweet juices. And the lemons add the perfect bright, fresh finish. Truly, this is an amazing (and healthy!) quick dinner for the busier seasons of life.
