I’ve been keeping my eye out recently for fun new appetizer recipes. Of course, all of the classics are great – a nice cheese board, some simple tomato bruschetta, or homemade herb crackers – but these days, I feel like mixing things up a bit. Especially as the weather starts to warm up a little I’m itching to host some dinner parties, potlucks, and ladies’ wine nights – and all of those call for delicious finger foods!
Rather than serving a sit down first course, I like to make a little something special to add to an array of hors d’oeuvres. Something delicious that guests can snack on as they arrive and sip a cocktail. Something easy to share, that’s fun to sample while smooshing with other guests. This creamy artichoke dip is simply my favorite right now!
I’ve been really into artichokes lately – I love the flavorful, tangy taste of the jarred artichoke hearts. And although I’ve only actually had artichoke dip in a restaurant once or twice, I’ve loved it every time! This simple version combines tangy cream cheese and creamy shredded mozzarella with plenty of the green hearts. I add lots of bold flavor with tart lemon juice and sharp dijon mustard. As the cheeses melt in the oven and the flavors come together, this dip transforms into an amazing rich, melty, creamy, and bright dip that’s perfect for any party!
