I’ve been known to claim rather enthusiastically that my very favorite food on this planet is strawberries. And I plan to prove that to you over the next couple months 🙂 Honestly, now that strawberry season is just beginning, my mind is racing with recipes that feature the delicious, ruby red berry. A champagne cocktail, a rich scone, a classic sweet and tart galette, and, of course, my most favorite strawberry shortcake. I literally can’t wait!
But today, we’re easing into strawberry season with these buttermilk biscuits. Because, see, the trick here is that the strawberry honey butter I love to pair with these biscuits is actually made using strawberry jam. So, technically, it’s something you could make anytime of year. In fact, I definitely suggest making this sweet and fruity butter every season of the year!
The strawberry butter is a super simple spread that can be whipped up in no time at all. With just softened butter, strawberry jam, honey, and a bit of salt, it’s rich, creamy, and perfectly sweet. Most delicious, of course, melted on top of these classic biscuits. And speaking of the biscuits… well, they’re pretty much perfect. Light, flaky, rich with butter, and nice and tangy from plenty of buttermilk. They take less than half an hour to stir up, cut out, and bake, meaning you can have fresh biscuits any time of the day or night. So get yourself into the kitchen, then let me know in the comments – what strawberry dishes are you most looking forward to this spring?
