I was recently talking to a friend at work about how life just seems to pick up right around this time of year. I remember last year, the first few months through winter and the beginning of spring felt very slow and relaxed. Then, suddenly, right around April and my birthday, the calendar just started to fill up fast. All of a sudden every weekend was booked up with a flight here or a car trip there or friends coming to visit for the weekend. I have a feeling that this coming summer is going to feature much of the same!

Just like last year, the beginning of 2017 felt quiet to me – a long string of simple, regular weeks spent mostly hanging out at home or in the neighborhood; punctuated, of course, by one truly fantastic vacation and a couple of other big events here and there. But now that April is upon us, I feel the warmer weather bringing with it all sorts of excursions and activities. Although this past weekend was one of those stay-at-home, lay-low types, it seems that the next ten or twelve are mostly booked up with friends or family visiting or a quick two day trip. It’s going to be a fun couple of months!

My weeknights are also starting to get busier, as I’ve joined two adult sports leagues. I’m excited to get moving and meet some new people, but it also means less time to work on The Millennial Cook. I’ve been thinking about my strategy to fit in everything that needs to get done. At the moment, I’m experimenting with spending Sunday evenings on a big cooking and photo shooting session. It worked well yesterday! But we’ll see how long I can keep it up.

This delicious shrimp dish is the perfect solution! Remember that story I told you a couple of months ago about my first ever cast iron pan? Well, my collection is growing! For my birthday Adam gave me this amazing skillet as well as a beautiful grill pan. I decided to thank him by cooking up, as the very first dish in this pan, something that I knew he would love: seafood! The combination of rich, melty butter, plenty of fresh garlic, and tart lemon juice in this dish pairs perfectly with fresh shrimp. All together it takes only ten minutes to whip up, and only requires five ingredients. So whether you’ve got friends in town or you’re rushing out to a softball game, it’s no excuse not to eat something delicious for dinner – like this amazingly decadent shrimp dish!

Garlic Lemon Butter Shrimp

This Garlic Lemon Butter Shrimp is a simple yet decadent ten minute dinner. A rich garlic lemon butter is tossed with fresh parsley and plenty of shrimp!

  • Serve this shrimp over pasta, or with fresh baguette and an arugula salad.

Ingredients

  • 4 tablespoons butter
  • 2 cloves garlic
  • 1 pound shrimp, peeled and deveined, with tails
  • ½ teaspoon sea salt
  • juice of 1 lemon
  • ¼ cup chopped parsley
  • ½ teaspoon freshly ground black pepper

Directions

  1. Melt the butter in a skillet over medium-high heat.
  2. Peel and mince the garlic cloves.
  3. Add garlic to butter and let cook, stirring regularly, for one minute.
  4. Meanwhile, rinse shrimp under cold water then dry thoroughly with a paper towel.
  5. Add shrimp to skillet and sprinkle with salt. Let cook, turning regularly, until pink, about three minutes.
  6. Turn off heat, add lemon juice, chopped parsley, and pepper, and stir to combine. Serve immediately.
