Happy Friday!! Any fun plans for the weekend? I’m sure that many of you are taking time on Sunday to spend with moms, grandmothers, daughters, aunts, nieces, and other important ladies in your life. I’m super, super excited because I actually get to spend the entire weekend with my mom and aunt! They’re arriving in San Francisco later today for a little weekend getaway, and I’m looking forward to showing them my apartment and office and to joining them for some fun meals together. And, of course, I can’t wait to show them some love, even if it’s simply a small sign of all the affection, appreciation, and gratitude that I have for the two of them! Before they head home on Sunday, they’re coming to my place for brunch and I’ll be whipping up a favorite strawberry dessert which is a total crowd pleaser!
Today’s recipe would also fit quite nicely on a Mother’s Day brunch menu. It’s actually pretty much the perfect spring and summer drink, so feel free to keep making it throughout the next few months! And yep, that is kombucha in this cocktail 🙂 I’ve been on a total kombucha kick lately. I’ll pick up a few bottles at Whole Foods every couple of weeks, and I like to start my day with a small glass. It’s light, refreshing, and makes me feel good – plus, I think (or at least want to think) that the probiotics help with some tummy issues I’ve been having here and there. I love all of the fruity flavors – strawberry, guava, hibiscus – but today we’re using ginger, which pairs perfectly with raspberry. Since I’ve seen recipes combining kombucha with alcohol popping up recently, I knew I had to give this new trend a try.
Today’s drink is super easy to throw together and contains all of the best elements of an amazing cocktail: it’s sweet, tart, fruity, tangy, slightly fizzy, and all of the delicious flavors pretty much mask the taste of the vodka! We simply combine a bit of sugar, plenty of lemon juice, and a handful of raspberries, muddle them together to release the sweet juices of the berries, add in some vodka, and top everything off with a generous pour of ginger kombucha! This combination is so light and refreshing, with the perfect balance of sweet and tart that will keep you coming back for more!
