Hey there! I’m popping in quick today to share a recipe that’s very near and dear to my heart. Because, drumroll please… tomorrow is my birthday! Yep, that’s right, April 13th. I’m turning 24! And for me, birthdays always mean my one, my only, my most favorite dessert: strawberry shortcake!

Seriously, this magnificent treat and I go way back. In fact, as the story goes, my mom made homemade strawberry shortcake for my very first birthday party. It was enjoyed outdoors in our backyard, under the sun, and plenty of fresh, seasonal strawberries were the star of the show. Ever since, it’s been tradition for my birthday celebrations to include delicious strawberry shortcake!

I’m sure you know the drill, but let’s go over it one more time: rich, flaky biscuits – full of butter and kissed with just a hint of sugar – are topped with the most sweet and juicy strawberries. These berries are literally at their prime peak of seasonality right now – so the timing is perfect! The syrupy juices from the strawberries soak into the shortcakes, infusing them with the most amazing fruity flavor. A cloud of lightly sweetened whipped cream on top is so rich and so decadent. Strawberry Shortcake

This Strawberry Shortcake is literally my most favorite dessert of all time! Fresh, juicy, sweet strawberries are paired with buttery, flaky biscuits and rich whipped cream.

Ingredients

  • 6 tablespoons butter
  • 2 cups flour
  • ½ cup sugar, divided
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 ½ cups heavy cream, divided
  • 2 pints strawberries
  • 1 teaspoon vanilla

Directions

  1. Place butter in the freezer for fifteen minutes so it is easier to grate.
  2. Preheat oven to 425°. Line a baking sheet with parchment paper.
  3. In a large bowl, whisk together flour, one quarter cup sugar, baking powder, and salt.
  4. Using a box grater, grate butter. Add to flour mixture and stir together with a fork until butter is evenly distributed.
  5. Add one cup cream and mix just until ingredients form a loose dough.
  6. Dump dough out onto a floured board. Knead a couple times, until dough is smooth.
  7. Pat dough into a circle one inch thick. Using a sharp knife, slice into six triangles.
  8. Transfer dough to prepared sheet. Bake until golden brown, about twelve minutes, then let cool slightly.
  9. Meanwhile, wash strawberries and remove green tops. Slice them into a bowl.
  10. Add two tablespoons sugar and toss to combine.
  11. Place remaining one and a half cups cream into a clean bowl. Beat until soft peaks form, then add vanilla and remaining two tablespoons sugar and continue beating until combined.
  12. To serve, split shortcakes with a fork and top with sliced strawberries and whipped cream.

  1. I love your photography, this looks so girly and delicious. Also, you seem to cut back on sugar, which I love! Germans use much less sugar than Americans, so I usually cut the sugar in half. I think I will try this recipe, it looks divine!
