Happy Monday! Today’s recipe is such a good one because it’s loaded with all sorts of yummy spring vegetables that will nourish you, body and soul! We ate so many delicious meals in Shanghai and Thailand, and they were pretty much entirely in restaurants. Apart from an omelette breakfast at my brother’s apartment and some particularly delicious mango on the beach, most of our meals – whether amazing Thai green curry, classic soup dumplings, or sizzling pots of spicy meat and vegetables – were prepared for us and were pretty over the top. After all, eating out is part of the fun of traveling! But I was definitely ready for some simple home cooked meals when we arrived back home last week. And plenty of vegetables!

So, even after landing late on Saturday night, I dragged myself out of bed on Sunday morning and headed to the farmer’s market. I picked up plenty of sweet potatoes and broccoli to roast, fresh spinach and arugula, lots of strawberries (which may have ended up in a dessert after all…) and some beautiful fresh sugar snap peas! I absolutely love the fresh, crisp, sweet peas, which are equally delicious raw, with maybe some hummus, and lightly blanched, as they are prepared here. I also grabbed a couple of bottles of kombucha and some beautiful farm fresh eggs, and I was absolutely ready for a healthy week of eating!

This light and refreshing salad is just the dish I was craving after a vacation full of heavy, indulgent eats. The beautiful peas I procured at the farmer’s market are amazingly bright green, full of so many vitamins and nutrients. They’re perfectly crisp and crunchy, with the best sweet flavor. I also added to this salad lots of fresh spicy radish, another spring veggie, and chopped red bell pepper. Lastly, a bunch of flavorful fresh mint leaves. I’ll definitely be making another batch of this salad soon, when I’m craving a wholesome, light meal – I hope you’ll join me!

Sugar Snap Salad

This Sugar Snap Salad is the perfect light and crisp vegetable dish for spring! Sweet snap peas are paired with spicy radishes, fresh mint leaves, and an easy homemade vinaigrette.

  • Pair this salad with a grilled meat or some bread and cheese for an easy and complete meal.

Ingredients

For Salad:

  • 1 pound sugar snap peas
  • 1 red bell pepper
  • 8 ounces fresh radishes
  • ¼ cup chopped mint leaves

For Dressing:

  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • ½ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper

Directions

  1. Bring a large pot of water to a boil.
  2. Meanwhile, wash and dry peas. Trim ends and remove strings.
  3. Chop peas into one-inch chunks.
  4. Add peas to boiling water. Cook until bright green, about two minutes, then drain peas and immediately run under cold water until cooled.
  5. Add dressing ingredients to a large bowl and whisk to combine.
  6. Wash and dry bell pepper and radishes.
  7. Cut bell pepper in half, remove the stem and seeds, and dice into small squares.
  8. Dice radishes into small cubes.
  9. Add cooled peas, diced peppers, diced radishes, and chopped mint leaves to the bowl with the dressing. Toss to combine.
